We tailor our catering menus depending on the type of event and our customers’ preferences, from intimate dinner parties, family style feasts and sumptuous outdoor BBQs. We work with our clients to make sure we're able to create a menu that suits their tastes, dietary requirements, and budget, while always ensuring the food on show will always be the star of the show. We offer a full range of seasonal dishes, from canapés and starters, side dishes, main courses and desserts. With Southern-style cooking, vegetables always take centre stage, so there are plenty of mouth-watering delights for vegetarians and vegans, without ever forgetting the committed carnivore. Here are some of our dishes to give you a flavour of what we do!
Slow & low wood fired BBQ
A cornerstone of Southern tradition, BBQ is synonymous with a good time and can be enjoyed all year round whatever the weather. We smoke our meats for hours upon end, until cooked to perfection using the finest quality meats from London’s top butchers. We compliment these with a selection of all-natural hard woods, that produce the highest quality blue smoke, infusing our cooking with a signature woodfired flavour using fuel from sustainable sources for that authentic taste.
Boston Butt Pulled Pork
Our signature dish - smoked 'slow & low', tender melt-in-the-mouth pulled pork with a tangy North Carolinian BBQ sauce.

BBQ Pork Belly with Peach-Chilli Jam glaze
Unctuous, luscious pork belly is slow smoked and basted with a peach-chilli jam glaze for a sticky, savoury bite that is the perfect balance of sweet n’ heat.

Beef Brisket
The undoubted King of BBQ cuts, this is another of our house specialities. Slow and delicately cooked prime ethically-sourced beef, with a juicy flavour and hint of oak smoke.

Pit Smoked Beef
Brined and rubbed in black pepper and ground coffee, a hunk of Ginger Pig topside beef is smoked until perfectly rare, then thinly sliced and served with our own smooth creamy horseradish sauce and special pit beef sauce.

Smoked BBQ Chicken
24-hour marinated chicken, slowly smoked on the grill, Juicy and succulent, it comes served with our very own home-made red BBQ sauce on the side.

Turkey Breast Rubbed with Herbs
A breast of Turkey which is brined overnight in aromatics and rubbed in fennel seed, black pepper, and herbs de Provence, before being smoked for several hours over hickory.
18th Century BBQ Lamb
Boned and rolled Ginger Pig Lamb Shoulder rubbed in salt & pepper and smoked for around 5 hours. Served in a white wine-based BBQ sauce of sage, garlic and a sprinkling of crushed chilli, that perfectly complements the unique flavour of lamb. A true feasting dish!

Pulled Jackfruit
Tofu & mushrooms are marinated in our NC BBQ sauce, before being smoked, combined in a citrus-honey mustard glaze.

Winter Warmers
Living in Blighty, the weather unfortunately doesn't lend itself to eating al fresco at often as we'd like. So here are some of our dishes that are ideal for indoor gatherings and smaller intimate dinner parties.
Smokey Cowboy Chilli
Chilli Con Carne, but not as you know it! Chunks of Ginger Pig beef chuck slowly cooked, with a mix of Ancho, Guajillo, Scotch Bonnet and Chipotle chillies and kidney beans. A rich, spicy, fall-apart tender beef stew. Served with fluffy American long-grain rice.
"Super Bowl" Chilli
A Tex-Mex classic, our tangy-tomatoey Chilli of pork and beef is slow-cooked , and seasoned with herbs and spices, for a deep flavour. Served with fluffy American long grain rice. Contains Celery.

Mississippi Pot Roast
A Beef Pot Roast, slow cooked with ranch seasoning and sweet pepperoncini chillies for a fall apart tender stew. Served with creamy mashed potatoes. Contains dairy.

Cajun Beef 'En Daube'
A taste of the bajou. A seasoned piece of chuck beef, with a pinch of cayenne pepper, slowly braised with the Holy Trinity of celery, onions and green peppers and shredded for a deep beefy one-pot

Smothered Chicken
Chicken pieces are marinated in hot sauce and cayenne, before smothering, and simmering slowly, the bird in a heavy-bottomed pot with onions, celery and green peppers alongside some thyme and bay for a taste of the bayou.

Pork & Cider Stew
A seasonal stew, perfect for colder nights. Slow-cooked pork in a flavourful one pot with apples, onions, celery, carrots, and herbs. Served with mashed potato.
Chicken Pilau
A South Carolinan coastal Low Country speciality - shredded chicken & rice steamed in broth*, with smoked sausage and peas. Bowl upon bowl will be devoured! *broth made with celery for flavour

Jambalaya
The famous Cajun dish from Louisiana. A spiced rice pilaf with a sofrito of celery, onions and green peppers, cooked with spices and delicious mix of shredded chicken, sausage & prawns.
Aubergine Purloo
A close cousin to Louisana's famous Jambayla, Purloo is a Low Country dish of the Geechee people who fused local produce with a West African Jollof. This Rice based dish is is a mix of vegetable goodness with Aubergine, tomatoes and peppers seasoned with Paprika.

TSK Double Cheeseburger
Our famous double cheeseburgers, made with our own blend of flank & chuck steak for the juiciest, beefiest burgers topped with slices of American cheese and a dollop of our famous special burger sauce.

Pit Beef Sammie
Thinly sliced, perfectly rare, pit beef, layered in a soft pillowy bap smeared with our own creamy homemade horseradish sauce and a smattering of our special BBQ pit beef sauce

Pulled Pork Bun
Our smoked North Carolina style pulled pork served on our home-made coleslaw served in a brioche bun

Sloppy Joe
Finely ground beef slowly simmered in a tomato-based sauce with green peppers, mustard, chilli powder and other seasonings, topped with a slice of American cheese for this iconic bun

Portobello Mushroom Burger
Meaty portobello mushrooms are marinated with garlic & onion, served in a brioche bun with watercress and a balsamic ali-oli
Pulled Jackfruit Burger
Piles of pulled jackfruit, cooked in our North Carolina spices and sauce, are ladled into a bun topped with our house slaw.

Tacos
Tasty Taco’s are one of our favourites, and with Mexican food right at home both sides of the Rio Grande, we sure like to fill our cowboy boots whenever we can! Served with Tortillas and a curated selection of condiments; ask us about our choice of Tex-Mex sides to make your taco’s really sing!
Chilli Colorado
Slowly braised chunks of Pork cooked in a redolent ancho, guajillo & pasilla “Red Chile” sauce. A deep, richly flavoured dish that is indulgent comfort food to the max!

Cochinita Pibil
The south-west’s answer to pulled pork. Pork shoulder is rubbed in brick-red achiote paste, with sweet spices and oregano and thyme, and smoked with tomato and onions wrapped in a banana leaf.
Barbacoa
Traditionally cooked in a covered pit in the ground, and where modern US slow & low BBQ comes from, beef brisket is simply cooked with seasoning and chipotles for maximum beefiness, before being pulled and piled into tacos!

Birria
Slow cooked lamb is cooked with mild ancho chilli, with a mix of cumin, coriander and oregano with tomatoes for a dish that is popular throughout the south-west.
Red Lentil & Bean Chilli
A vibrant red lentil chilli, packed full of flavour, with red and white beans. Savoury celery, sweet carrots and tangy tomatoes are paired with a mix of smoky chipotle, earthy pasilla & chocolatey-liquorice mulato chillies.
Vegetarian & Vegan

Meaty Jackfruit is shredded and coated in our house BBQ rub, before being smoked in hickory and given lift from our NC BBQ sauce

Aubergine Purloo

Roasted Cauliflower with Lemon Pepper Millet
Roasted and caramelised cauliflower served over millet, a delicious fluffy grain, and raisins.

Roasted Tomato & Cheese Pie
A hearty open-topped vegetarian pie. Basil and thyme-seasoned slow-roasted tomatoes and caramelised onions topped with a gooey cheesy crust.

Tomato & Okra Stew
The ‘Holy Trinity’ of onions, green peppers and celery are combined with deep and smokey tomatoes and paired with mild and grassy okra for a blow your mind Low Country stew

Red Lentil & Bean Chilli
A vibrant red lentil chilli, packed full of flavour, with red and white beans. Savoury celery, sweet carrots and tangy tomatoes are paired with a mix of smoky chipotle, earthy pasilla & chocolatey-liquorice mulato chillies.
Nibbles & Canapes
Perfect for canapes or when you just want a little nibble to go round. Be warned, they are all oh-so-moreish!
Southern Spiced Buffalo Wings
Juicy chicken wings coated in Southern spices, fried and flash grilled before being finished with Frank's Original Red Hot sauce. Served with sticks of celery and home-made creamy ranch or blue cheese dip. We can also do a variety of other grilled and BBQ wings to suit your tastes!

Jalapeno 'Poppers'
A heavenly mix of salt, sweet and spice, these Jalapeno chillies are stuffed with creamy goats' cheese and wrapped in bacon before being grilled to perfection. Finished with a light drizzle of golden syrup.

'Chips' & Dips (& Cruidtes)
Delightful dips that never fail to please that include chilli con queso, watermelon & parmesan, black-eyed pea hummus, creamy French Onion and garlicky bagna cauda. Served with a selection of cruidites & ‘chips’.

Chislic
“Gods Own Snack”. Morsels of beef chuck are coated in garlic and onion powders before being deep-fried for a deep and tasty nibble that will really get the appetite going. Served with our home-made chipotle ketchup

Pork Belly Bites
Smoked bite sized morsels of pork belly coated in our house rub and glazed in our ‘Red’ BBQ sauce

Chicken Tenders
Strips of chicken are brined in a milk brine, making juicy succulent tenders infused with a hint of cumin, cloves, and cinnamon, before being triple dipped in our special buttermilk dredged for delicious southern-fried chicken
Cauliflower Bites
Florets of cauliflower are dredged in our own batter with our wing spices and deep-fried as a delicious veggie alternative to our Buffalo wings. Served with our home-made buffalo wing sauce.
Quails with chocolate gravy
Quails legs are boldy spiced and flash grilled. Dipped in a chocolate gravy, these tender bites are definitely morish!
Devilled Eggs
A tradition through-out the south with a classic mustard mayonnaise with a hint of Sriiracha
